These yummy lentil crackers are a bit of a social media viral trend. This is my version. The beauty of them is that they are gluten free and vegan, so very accessible for those who are avoiding meat, gluten, dairy.
Roasted Leftover Veg and Bean Soup
The beauty of this soup is that you can simply roast any veggies you might have left over in the fridge. I generally make my soup on a Sunday and enjoy for lunch on a Monday in-between my busy work day. You can use any beans, if you have them (just make sure they are cooked first unless you are using lentils), and I have lots of dried organic mung beans in my cupboard as I use them for sprouting. I thought I’d add them to this soup to see what the result was, it was yummy.
Holiday Curry!
I made this curry a few times during our trip to Colombia. After too many street food empanadas and my slight dislike of arepas this was a healthier yummy option, plus we had some amazing kitchens to cook in with a couple of the AirBnB properties that we were lucky enough to rent. If you are vegetarian, just leave out any meat, like I did a couple of times.

These yummy organic treats are a cross :) between hot cross buns and toasted teacakes. They are also much healthier than most of the ones you can buy in the shops. So easy to make, and even more so if you have a Ninja air fryer with a ‘prove’ setting, which is science genius! They also freeze extremely well and you can pop them in the toaster straight from the freezer.

Yellow Split Pea Curry - 'Dhansak' style
The smoothness of the yellow split peas gives this curry an awesome creamy flavour, even if you don’t add the coconut cream/milk. It’s also vegan. I used the pressure cooker function on my 15 in 1 Ninja Multicooker to cook the peas first, but you could easily just cover with water and simmer them in a pan with a lid on for about 30 mins and then mash with a potato masher for the same effect (just keep checking in case more water is needed).

This organic egg fried rice is one of my best recipes! so easy to make when you know how, and so delicious. You can use up left over boiled rice or prepare some fresh. I harvested a batch of the smaller spring onions that I have been growing, they are perfect for it and the green tops are quite sweet.

This Christmas Piccalilli recipe is perfect to make right now. You can eat it right away (as I did last night on a jacket potato!) or keep it for a couple of months before opening. If you like piccalilli, this home made version is kick-ass and so much better than what you can buy (I don’t think there are many companies left making it!).
Organic Slow Cooker Veg & Lentil Curry
This organic slow cooker veg and lentil curry is seriously quick and easy to prepare. I used whatever veg I had left over - it all works! I'm loving my slow cooker at the moment as I usually have 10 minutes in the morning to pop everything in, and then leave it to cook for a minimum of 8 hours so I can eat it whenever I'm home from work, which can often be quite late.
Organic Potato Style Waffle Cakes!
These organic potato waffle style cakes are perfect for breakfast or brunch. The amazing thing about them is that you can freeze them once cooked, and pop in the toaster to reheat while you poach your eggs; this creates a super fast meal. You might need two cycles with the toaster depending on how crispy you want them.
Organic Mince Plait
Happy Organic September!!! I apologise for the lack of recipe last week, we drove to Heathrow to take my Dad to the Airport and also fitted in a Thorpe Park visit! This organic baked plait can be made with organic beef mince (we love Daylesford or Ocado own brand) or organic vegan soya mince such as Clearspring. I made this for my Dad as he loves his pastry when he visits the UK from the Caribbean.
