This yummy veggie traybake is really easy to make and is fabulous with gravy and my veggie sausages (recipe here). It’s also a cheap way to use organic ingredients as it works with the basics. You can omit the stuffing if required, I just had an old packet from Christmas that needed using up.
Serves two people, but will keep well in the fridge and reheat beautifully the next day if you just want one serving (I’ve actually had it for breakfast before!).
You’ll need:
2 potatoes, chopped into roast potato style shapes and then boiled for about 15 mins until soft.
2 carrots, finely cut into long strips.
1/4 onion, finely sliced.
1/4 packet of stuffing (if using) mixed to the packet recipe and rolled into little balls. I also added a foraged apple which I peeled and diced small.
Dried sage, or mixed herbs.
Oil to bake.
Salt and pepper.
How to:
Place everything on a tray with greaseproof paper on, sprinkle over the herbs and salt and pepper and drizzle with oil. Bake for about 20-25 mins on 200c (fan) or air fry for about 20 mins.
