These vegan organic veggie katsu cutlets are awesome. Inspired by something similar that I had in New York, and also the classic ‘vegetable cutlet’ that I had on a train in India from Delhi to Agra, this recipe takes a while to prepare, but once done. they freeze easily or will keep in the fridge for a couple of days, so you could batch make if you like. They crisp back up easily in the air fryer or oven.
Makes 5 katsu type patties - about the size of a small chicken breast (you can size these to suit you). I’d normally serve one per person although you could easily eat two if you are hungry! All veg is from Ocado, spices are from around the world on our travels"!
You’ll need:
1 peeled sweet potato, 2 white unpeeled potatoes, chopped roughly and boiled and drained like they would then make mash potato.
1/3 green pepper, 2-3 carrots, 1/2 onion, thumb sized piece of peeled ginger, 1 clove garlic. Chop all of these the size of a pea, except the garlic and ginger, chop this very finely or crush/grate.
Spice mix: 1 tsp turmeric, 1/2 tsp each of chilli powder, cumin seeds or powder, curry powder, coriander powder. 1 cardamom pod, salt and sugar.
A handful of finely chopped fresh coriander leaves or use parsley, mint or even fresh oregano.
Oil to fry and bake.
1/2 cup of breadcrumbs.
How to:
Fry off the veg (excluding the mashed potato and sweet potato) with the spice mix and a slosh of oil until they are all tender, I popped a lid on and used a low temperature. Leave to cool.
Mash the potato and sweet potato roughly using a fork, don’t be too specific.
Blend everything with the coriander until it is evenly mixed.
Use your hands to form into small chicken breast type patties.
Roll each on carefully in breadcrumbs.
Arrange on a baking tray, drizzle with oil.
Air fry for about 20 mins (check to see if they crisp up and continue for 3-4 mins at a time if not) or oven bake at 200c (fan), again keep checking.
I served mine with a curry sauce and my epic ‘best egg fried rice’ (although I added loads of mushrooms to it this time!). Egg fried rice recipe here.
