This epic retro melting moments recipe is inspired by my Mum’s Bero Baking booklet which I still fondly have at home. I made these organic and changed the ingredients. They last a good few days in the fridge and retain their crispy melting yumminess.
Makes 8-10 little moments.
You’ll Need:
50g any white flour (I used Dove’s Farm).
25g sugar ( I used Billingtons).
1 egg yolk (Steve ate the white in his protein shake :))
40g coconut oil.
A slosh of agave syrup with vanilla (I used Groovy Food).
A few teaspoons of desiccated coconut for rolling the moments in.
How to:
Mix the coconut oil with the sugar and agave until smooth (It was extremely warm in our house that day so my coconut oil was already melted!).
Add in the egg and flour, mix well. You should be able to shape it into little balls like truffles. If it looks too dry, add a tiny bit more flour.
Roll the balls in the coconut and pop on a baking tray.
Bake at 180c (fan) for about 15 mins, check them, if they seem crispy and you can tap them, they are done, if not, keep popping them back for a minute, check they do not burn!
Enjoy these fab treats on their own, or with some lovely vanilla ice cream.
