Simple Healthy Organic Soup

This simple speedy healthy organic soup is a staple in our house. It is also one of the cheapest organic meals you can make, as potatoes, carrots and onions are great budget options if you feel that organic is an expensive choice. If you haven’t bought organic products before, start with these three and taste the difference! All veg is M&S organic from Ocado. It is also so quick, it took me 20 minutes in all to make this today as my Mum in law unexpectedly came round to our house and I wanted to cook her a lovely lunch that I know she likes.

Makes three small bowls.

You’ll need:

3 medium carrots

One small potato

1/2 onion peeled

1 peeled garlic clove (optional)

A handful of fresh herbs (optional) I used parsley from my garden

Salt and pepper

A sprinkle of turmeric (optional)

How to:

Chop everything roughly, don’t bother to peel the carrots (just top and tail), and the potatoes. Place in the pan with enough boiling water to just cover them, add the salt, pepper and turmeric if using.

Boil fairly rapidly with a lid on for about 15 mins or until the carrots are just tender.

Leave to cool for 5 mins, add the herbs if using, and blitz using a stick blender or equivalent.
