Foraged Apple Mini Muffins

These foraged apple mini muffins are yummy and can be made very small batch style. We had a lovely walk around the Snaith area and the apple tree we saw had so many wasted on the floor I thought I should pick a few off the tree. You can use any apples and you only need one for this recipe.

Makes six fairy cake style muffin/buns.

You’ll need:

1 apple, peeled and chopped roughly into 1/2 cm sized chunks

75g of flour (I used Marriages brown flour which is a blend of wholemeal and white)

1/2 tsp baking powder

1 egg yolk or white

20g sugar (I used Billington’s organic)

50ml milk (I used Yeo Valley)

25g butter, melted

How to:

Add the melted butter to all of the other ingredients and mix fairly well. Pour into 6 cupcake papers and bake at 200c (fan) for about 15 mins - keep checking that they don’t burn as they are really small!

Enjoy as a healthy (ish) treat with custard or ice cream, or on their own.
