These bhajis are a great way to use the green leaves from your cauliflower. You could also use kale, cavolo nero cabbage, even sprouts. They work so well in an air fryer but also really lovely baked in the oven
Makes 8 large bhajis or smaller ones depending on the size you like! All veg is Ocado organic.
You’ll need:
The green leaves from a cauliflower, chopped finely.
1-2 onions, peeled and sliced fairly finely.
1 cup of besan (chickpea flour/gram flour). I used Doves Farm from Ocado.
Spice mix: 1 teaspoon each of turmeric, cumin, coriander, onion seeds if you have them, salt.
Water to bind.
1 teaspoon of bicarbonate of soda/baking powder.
Oil to bake (I used Olivado organic).
How to:
Mix everything in a bowl and add a dash of water, so it mixes together quite well and you can spoon shapes onto a baking tray that hold together.
Drizzle with oil.
Air fry on 200c for about 15 mins but do check - you want them crispy but not burnt. Or oven bake, same temp, possibly for 20 mins, but again do check. I turned mine twice to get the bottoms crispy.
Eat now or they freeze really well, and you can bake straight from frozen for about 15 mins.
