These yummy organic treats are a cross :) between hot cross buns and toasted teacakes. They are also much healthier than most of the ones you can buy in the shops. So easy to make, and even more so if you have a Ninja air fryer with a ‘prove’ setting, which is science genius! They also freeze extremely well and you can pop them in the toaster straight from the freezer (you might need a couple of pops on the toaster, keep checking).
Makes 6 scone sized teacakes.
You’ll need:
200g flour (I used half Dove’s Farm organic white and half Marriages Brown to add a bit more fibre)
2 tsp dried yeast
1.5 tsp cinnamon
1/2 tsp nutmeg
A dash of lemon juice (optional)
20g butter, melted with 100ml milk until fairly hot but not boiling
1/2 tsp salt
125g of sultanas (We LOVE Crazy Jack’s organic)
35g sugar
How to:
Put the dried ingredients into a bowl, pour over the milk and butter and add the lemon juice. Knead for 10 minutes so it’s like a bread dough, not a scone mix. If too wet, add a little more flour, and vice versa just add a little warm water. Use a knife or your hands to split into 6 little teacake sized buns. Pop on greaseproof paper. Prove for 35 mins in a Ninja, or pop in a warm place (e.g. near a radiator). Bake for about 20 mins on 180c - keep checking, the tops should be a little bit brown and if you tap the bottom of one, it should have a hollow sound.
Once ready, slice on in half and pop in the toaster for a few mins to crisp the inside. Serve with butter!
