These Thai style sweetcorn fritters are gluten free and so easy to make. I made a thai curry and wanted a nice crispy side to go with it so I made these small batch fritters in our Ninja air fryer.
Makes 4 bhaji sized fritters.
You’ll need:
1/2 cup of chickpea flour ( I used Dove’s Farm organic).
1/2 cup of frozen or fresh sweetcorn.
1 tsp of coriander, curry powder, turmeric.
1/2 tsp salt.
1/3 of a red chilli finely chopped.
A green top off a spring onion (optional)
1 cm of lemongrass stalks, very finely chopped.
A small piece of ginger, peeled and very finely chopped.
1 tsp baking powder.
Oil to bake.
Water to lengthen.
How to:
Mix everything together except the oil so it forms a thick batter.
Dollop four on to a baking sheet.
Drizzle with oil.
Air fry at 180c for about 20 mins or oven bake - keep checking as you might need a bit longer to crisp them up. I generally turn mine over 3/4 of the way through to get the undersides crispy as well.
Eat right away or store in the fridge for a couple of days. They recrisp up in about 3-4 mins.
Enjoy.
