Organic Sprouted Mung Beans

Enjoy watching nature do its thing with these amazing sprouted mung beans. Super easy to grow, they are highly nutritious and easily digestible.  They work wonderfully in a salad, and also stir fry recipes.  I always struggle to find organic bean sprouts easily in the shops etc, so I decided to sprout my own, and here is the result!

This recipe makes enough as an ingredient for one stir fry for two people, and also one portion in a salad. Just multiply for more, but bear in mind once they have sprouted well, it is best to eat them one that day in my opinion. It takes around five days to grow them to the size you'll see on the picture. If you need reminding to rinse and re-water the beans, just set an alarm on your phone.

You'll need:

3-4 heaped teaspoons of dried organic mung beans (ours are from the fantastic seed people at Tamar Organics,)

A sterilised jar - a recycled jam jar works well, or something similar; you don't need the lid.

A small piece of kitchen paper or ordinary paper

Water :) we use a filter by Doulton - the British Berkefeld

How to:

Pop the dried beans in a sieve, rinse well, and place in a jar with the paper placed loosely on top.  Leave them on the kitchen worktop or similar.

Twice a day (at least 6 hours apart), rinse the beans, and also rinse the jar well, and place the beans back in the jar with the paper on top.

After a day or two, they will start to sprout, just continue the rinsing process twice a day, until your beans have a nice 'sprout' growing out - we ate ours when they weren't quite as big as the traditional bean sprouts, as we like the flavour better.

Once they are at the size you like, pop them in the fridge, and best to eat them on that day. Enjoy!
